Ingredients
1kg Granny Smith apples
1 tsp orange zest
1 tsp ground cinnamon
1/4 cup caster sugar, plus extra to sprinkle
2 sheets frozen shortcrust pastry, defrosted
2 sheets frozen puff pastry, defrosted
1 egg, beaten
1/4 cup water
Vanilla ice cream, to serve

Method
Peel, core and dice apples.
Place in saucepan with orange zest, cinnamon and 1/4 cup water.
Cover and cook over medium heat for 8 minutes until soft.
Remove from heat and stir through sugar.
Preheat pie maker according to manufacturer’s instructions.
Cut out 4 large rounds of shortcrust pastry and line base of plates.
Fill with cooked apple mixture.
Cut 4 smaller rounds of puff pastry and place on top of the apples.
Close lid of pie maker and cook for 6 minutes.
Open lid and brush tops of pies with beaten egg. Sprinkle with extra sugar.
Close lid and cook for a further 2 minutes until golden.
Repeat with remaining ingredients to make four more. Serve warm with vanilla ice cream. |
