Ingredients
1kg Granny Smith apples
1bunch Rhubarb
1 tsp corn or potato starch
1 tsp ground cinnamon
1/2 Lemon juice
1/4 cup caster sugar, plus extra to sprinkle

Method
Peel, core and dice apples.
Place in saucepan with cinnamon and sugarand 1/4 cup water.
Cover and cook over medium heat for 2 minutes.
Add chopped rhubarb and continue to cook for another 6 minutes until soft but firm.
Mix starch with 1/4 cup water and add to mixture to thicken cook for a further minute.
Allow to cool slightly and to pie case and cook for 15 -20minutes in the oven.
Serve warm with vanilla ice cream.
