Ingredients
125 g butter
1/2 cup brown sugar
1 egg
3 Peppermint Crisp chocolate bars crushed
1/2 cup sugar
1 tsp vanilla essence
1 3/4 cup self-raising flour
Method
Beat butter, sugar and vanilla until light and creamy.
Beat in egg. Fold in sifted flour and crushed chocolate.
Roll heaped teaspoons of mixture into balls.
Place onto greased baking trays and flatten with a fork.
Bake at 180C for 12-15 minutes until lightly brown.
