Pumpkin Pie

Ingredients
Pastry or shortcrust deep dish pie crust
2 Cup plain flour
½ tps baking powder 
Pinch salt
125g butter
1½ tps water
1tps lemon juice
Filling
750g pumpkin
2 large eggs
¾ Cup honey
Pinch salt
1½ tps mixed spice
¾ Cup evaporated milk 
¾ Cup milk
     
Directions
Pastry
Sift dry ingredients  Rub in butter until resembles bread crumbs 
Mix to a dough with water and lemon juice 
Roll out to desired thickness 
Place in pie dish

Filing
Blend pumpkin with all the ingredients
Pour into prepared crust
Place in a hot oven (220°C) for 15minutes,
decrease heat to moderate (180°C) bake for 45minutes or until set.
If desired drizzle with honey after 30minutes

Serve with cream or ice cream
